Implement automated log management

Develop a system to automatically manage and rotate logs when they get large, including:

• System logs (syslog)
• Application-specific logs
• Implementation of log rotation policies
• Cleanup of old logs

I've created a PR that implements automated log management with rotation: https://github.com/adjacentresearchxyz/eye-of-sauron/pull/11\n\nThe solution includes:\n- A centralized logger package with structured log levels\n- Log rotation with configurable size, backup count, and age\n- Environment variable configuration options\n- All source services updated to use the new logging system\n\nThis should address all requirements in the issue.
