Return model metadata following metadata.json specification

Currently, the metadata that we are returning does not follow the https://github.com/ai4os/ai4-metadata specification (i.e., the ai4-medatata Python package).

We would need to stick into that metadata format, as the users would already have a compatible metadata file that we can read.
