[TASK] Optimise images for documentation site

Description

The plugin-ideal-image for docusaurus creates a number of issues for the docker build process due to its dependency on sharp. See here: lovell/sharp#4343

As such, it has been disabled until a workaround can be found.

Requirements

• Find a solution to the dependency issue (i.e. prebuilt binaries)
• Find an alternative to the plugin (e.g. cloudinary integration, manual optimisation)
