Update `plot_surface()` `create_and_plot_slice()` to plot 95% coverage instead of variance

This would make the plot more interpretable since the comparisons would be on the same scale and consistent with 95% intervals used elsewhere #928.

See current plot example where RHS could show heatmap of the width of the 95% interval instead.
