Update composer.json to newer euautomation/graphql-client release.

I was going to do a pull but figured this is such a basic change that the authors may want to do it themselves.

Need to update composer.json so that the euautomation/graphql-client is the lastest master branch version (I believe 0.3?).  This is so the dependencey allows for the newer version of guzzle.  Otherwise, the package cannot be used for Laravel 9.
