We currently ship postfix and sendmail as MTAs. Is there any special reason why exim is desired over either of these?

Exim is a well designed, maintained and documented MTA. The AL2023 documentation now covers that the exim package, previously only available in EPEL, is not shipped in Amazon Linux 2023 and both the postfix and sendmail MTAs are provided.
