New Stat: Total sum of people contributing to Collections

Somewhere (possibly https://stats.eng.ansible.com/apps/collections/contributors/) it would be great to have a graph of total unique contributors to collections over time.

Bonus points awarded for tracking all contributors (interacted with issues or PRs) and code merged.

As a total metric over many collections, this probably makes more sense for the new app I'm working on. Good to have it noted, I'll migrate this issue once the new repo is up. Thanks!
