[Task]: Set the default language for BaseTextExplorerFileTypeHandler to “plaintext”

### What needs to happen?

Setting the default language id in BaseTextExplorerFileTypeHandler to “plaintext” allows .log, .gitignore, and files without extensions to display correctly in dark mode on Windows.
