PID Coefficients for HOT TOP KN-8828B-2K+ ??

Hi I have been trying to find PID coefficients for my Hot Top roaster and I am having a hard time even finding initial values to tune. To start I just want to have the SV be my preheat temp and hold it there , and eventually have it reproduce roast curves. The temp overshoots quite a bit (20-30 F) and I keep lowering kP and each overshoot takes several minutes and after sitting here for an hour watching the temperature I figured I would check here if anyone else has already gone through the process.
I do not see an Auto Tune button in the PID window, and Chat told me it's not available for my machine.
My current values are kP=30, kI=0.20, kD=300. I have had kP down to 20 and kI down to 0 and kD down to 50. I feel like I am just throwing darts in the dark.
I am familiar with PID in industrial control systems. It's just annoying that each iteration takes so long! Next I will just zero kI and kD and make kP much lower.

The hottop reacts extermly slow on heater changes. It also has basically zero air flow. This together makes it a very bad candidate for PID control. PID control works very well on fast reacting machines like a small 100g air roaster with a powerful heater, or powerful gas roasters that work mainly with convection heating.

Thanks! Any other suggestions for pre-heating with If/then statements or any other controls built into Artisan? At this point I just want the roaster to pre-heat and hold temperature for a few minutes before I start the roast.
