feat: versioning support

Description

Docs should provide a dropdown of previous versions linking too older versions of the docs.

Context

Without support for older versions the docs will be less helpful for anyone stuck on an older version of a library, this will be especially true of major version bumps.

Possible implementation

Add support for sphinx-multiversion.
