Migrate to CodePipeline V2

Is your feature request related to a problem? Please describe.
We have not customized CfCT, so there's not much I personally benefit from this migration. But considering the list of additional features of V2, it might make sense to consider this.

I just deployed the new version of CfCT (2.8.1) and now the pipeline is V2. Is this a because of the changes in the template or did I do something that changed the version? Looking at the template, I don't see PipelineType anywhere.
