In the import_from_tables notebook, we have instructions on how to create a table in S3 Tables from CSV (PaySim dataset). That table requires an existing catalog (default to S3 Tables catalog) and database.

Add details in the notebook on how to create the database, and get the existing catalog for use in the environment variables.
Describe alternatives you've considered
Defaults should be included as well in the notebook.
