How to customize what to show/hide in Walker?

Scenario - I have installed the Brazilian government Tax return apps in my computer.
for each year tax return, it is a completely new app. for what I needed to do, I had to install the past 5 years apps so I could match print the pdf's for my records. the programs are not very large, so I think it is ok to leave them installed in the computer since it is what I had in my previous OS.
the problem is that with the installation, several small apps are installed (something like - help app, unistall app, the app itself). and it install one for each year's version.
maybe I could edit Walker file to hide these programs from the application launcher, but still be able to launch it anyways.

any suggestions on how to handle this?

Take a look at e.g. ~/.local/share/omarchy/applications/hidden/electron34.desktop and the other files within, they make sure those apps are hidden in walker, you should be able to achive the same for those apps.
