Make fingerprint lib configurable

Summary

As I switched to linux I found out that my fingerprint scanner that bought for the pc is not supported by fprintd lib. However it is supported by one of the forks, so I installed one.

Problem

When Omarchy is updated, it reinstalls original library, which makes my fingerprint reader unusable again.

Proposed Solution

Can we add some sort of config file where packages that Omarchy installs/updates forcefully can be configured.
For example specify that some package A should be substituted with package B, so Omarchy don't reinstalls original one.
