First up great plugin! It looks like the plugin isn't currently being maintained so I've taken the liberty of forking it, refactoring to fix bugs and get it working with Capacitor 4, cleaning up the API, creating a sample project, adding documentation, and releasing it as @capacitor-community/image-to-text:
