Don't force users Laravel 12! Allow to choose like with PHP

Few weeks ago, Herd provided Laravel 11.. now suddenly for a next project it provides 12. I need 11! Sure i can do manual install, but i just bought pro for the easy install etc. if it forces me a version i can't use (company policy) that's a waste of money.

A few options:

• Allow to choose between stable laravel version (best solution), and it's already 'build in' you do the same for PHP
• Allow to rollback Herd Updates, so can can just downgrade (stupid, but works for me)

Herd is great.. but forcing users a specific version, idk; are your guys working for Microsoft or what? :p
