docs(tutorial): wizard-first steps 6-7 with human/agent tabs

Replace the flag-only intent declaration and hand-edited mapping YAML
with a wizard walkthrough on the Human tab, keeping the CLI/YAML form
on the Agent tab. Rename has_flight to number_of_flights to match the
declared intent so the project-wide coverage check passes, and switch
the remaining bare biotope commands to uv run for consistency.
