Backup format version handling during restore

Define behavior when the app encounters backup data with an unknown or newer version.

- Gracefully handle `EncryptedWalletBackup` or `EncryptedMasterKeyBackup` with unrecognized version numbers
- Show user-friendly message ("Update the app to restore this backup")
- Don't silently skip or corrupt data from newer versions
- Define forward-compatibility strategy for v1
