feat: compute power from resistance for MOK Fitness S10 Ultra bike

The bike reports a fixed/estimated power over FTMS that doesn't react
to resistance changes made on the bike itself. Detect it by BLE name
(MOKFITNESS-*) and, when the existing Custom CSC Resistance/Watt Table
setting is enabled, derive power from cadence and native resistance
instead of using the bike's reported power.
