In Data Migrator history, align database versions in tests and docs with the C8 RDBMS

Acceptance Criteria (Required on creation)

Support the following databases with automated tests:

• MySQL 8.0
• MariaDB 10.6 / 11.8
• Oracle 19c / 23ai
  • Oracle 19c is not available as a Docker image, but 18, which allows us to ensure that between 18 and 23, nothing breaks.
  • Oracle 18c/19c/20c/21c share the same language level.
• PostgreSQL 15 / 18
• Microsoft SQL Server 2022

Hints

For older or newer supported versions (or more exotic AWS-based RDBMS), let's wait for user feedback.
