[ENHANCEMENT] Update Full Stack Production deployment guide for C8.8

Describe the use case:

Describe the enhancement/feature:

Basically update the 8.7 production guide for 8.8, respecting the new architecture and setup.

Make sure the production guide shows a multi-namespace example with a values.yaml to deploy the orchestration cluster, and another values.yaml with orchestration disabled deploying the other components (similar to 8.7).

Desired outcome and acceptance tests:

We have a publish production guide for 8.8.

WHile the guide is updated, the whole setup was only tested in it parts (but not working together - we need an integration test for it)
