[ISSUE] connectors.logging.level option in values.yaml is not used anywhere

Describe the issue:

In a recent support ticket SUPPORT-26736, we learned that there is a connectors.logging.level option in values.yaml that customers have tried to use, but find out that it doesn't do anything. Upon further inspection, I learned that this values.yaml option was unused even when the connectors component was first introduced in the helm chart in #566 .

In response to this, we should not only fix the unused connectors option, but we should also include a script or some automation to search every option in values.yaml and make sure it's used in a template at least once.
