Quickstart C8Run: Review and make sure guide is working

• Guide updated and configuration is functional with 8.8
• Updated wording and terminology to 8.8 (orchestration cluster, management and modeling cluster, ...)

I went through the c8run doc and had a minor suggestion. But I could not connect to an external ES with the docs. Will give more guidance once I found that out.

I tried to star with:
/start.sh --disable-elasticsearch --config application.yaml

application.yaml:

camunda.data.secondary-storage:
  autoconfigure-camunda-exporter: true
  type: "elasticsearch"
  elasticsearch:
    url: "http://localhost:9200"
    cluster-name: "docker-cluster"
