Transition lessons to The Carpentries Workbench

Now that the review process is over and the curriculum has been accepted to JOSE, I think we should transition these lessons to use the new lesson infrastructure. If you are happy with that idea, please let me know and I will set aside some time to run through the transition workflow for each lesson. (Or you can do it yourselves if you would like to?)

Note that it will be best to handle #22 and its equivalents on the other repositories first

Please, would be great If you could help us with the transition, we planned to do it ourselves, but we haven't found the time. All other issues have been closed.

I believe this will be resolved by transitioning these lessons to the "new" Carpentries Workbench, but I'm unable to make serve to locally build and serve the jekyll site. I would like to make some updates to go along with a new AMI that reflects upgrades to Ubuntu 22, R/RStudio, and the tools in the conda environment. But need to be able to build the site in order to develop the corresponding lesson updates.

If there are instructions for transitioning these lesson sites and it's not too onerous, I'm willing to give it a try.

I am working on it. I have three of the five lessons transitioned already but the R lesson and workshop overview still need to be finished. One or two of these were not straightforward migrations, so I think it is best left with me thanks @kerchner
