(some???) Carpentries lessons try to use javascript libraries from the internet

Some of the Carpentries lesson pages take a long time to load because they are trying to get javascript packages from the internet.

For example the R Ecology lesson is trying to load the mathjax library from cloudflare. Can we mirror these libraries too and change the paths in the HTML to the mirrored location?

Thanks for this @colinsauze. Can you provide a little more detail on where you're seeing the slowness. I tried loading this lesson without an internet connection and everything worked quickly and as expected (see screencast), so just trying to understand how to replicate so we can explore solutions.
