would it be possible to browse the configs within the GUI like GIT Code?

Right now you can only "browse" the differences between each backup in the diff view. It's not planned to implement a whole file browser into the GUI. Downloading the latest file and browsing it via your desired IDE is the better solution IMO.

well - thats a philosophy and security question - we do prefer not to download unnecessary confidential files to a local potential unsecured device where not really necessary except for emergency recovery.

Got it. You may want to secure KiwiSSH to only permit access from specific (admin) hosts and specific users via a firewall and/or proxy. Nonetheless, I'll add this request to the future goals.
