Add the documentation on the GMM-based estimator

The GMM-based estimator is not documented properly:

• Add GMMs to the list of estimators.
• Add documentation on GMMs.
• Update the version of the package to 0.2.0.
• Use poetry to submit a new version of the package to PyPI.
