Push all relevant docker images to ghcr

Ideally we have a CI workflow that builds Docker images for:

• evm-prover
• indexer
• simapp

and publishes them all to GHCR.

so we either need:

• Option A: @MSevey to enable “Allow members to publish packages” for the Github organization
• Option B: Create a GH workflow to publish the package because the access token used in CI should have permission to create a new package.

Tried to do this with @MSevey yesterday and it wasn't possible to create a package on GH for the new image so I think we'll need to do Option B:
