Plex & Tautulli

I have plex set up to sync to CW ... I also added Tautulli and used it to populate history. If Tautulli is getting its data from plex, and it is only providing history. I am safe to disable/delete that sync job? I just want to make sure i am not missing a reason I'd want to keep the sync running

Yes, you can remove the sync, no problem. It is basically intended as a one time import, after that you can remove the sync again. Some users prefer to keep the sync in place, but that is a small minority.

And you're right. Plex will populate Tautulli, so there is no intervention from CrossWatch in that process at all.
