Sandi Gant's Sweet Potato Casserole

From a collection of recipes my mother in law gave my wife when she went to college. A family holiday classic.

Ingredients

  • 2 eggs, well beaten
  • 3 cups peeled, cooked, mashed sweet potatoes
  • 1/2 cup milk
  • 1 cup butter, divided into two half-cup pieces
  • 1 cup sugar
  • 1 tsp. vanilla
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 400ºF
  2. Combine sweet potatoes, milk, 1/2 cup butter, sugar, eggs, and vanilla in a large bowl
  3. Pour into a medium greased casserole dish and bake for 20 minutes
  4. Combine 1/2 cup butter, flour, brown sugar and pecans; spread over the potato mixture
  5. Reduce temperature to 250ºF until melted
