Add a service monitor for Ingress Nginx that measures apps golden metrics

Using minikube addons enable ingress with this project. It doesn't seem possible to edit nginx-ingress configmaps to have a scrapable metrics endpoint via Minikube. Perhaps this repo could install nginx-ingress and configure it itself ?
