Consider key/value options for all format syntax defaults

Right now VALUE supports both option-style (|label:, |default:) and legacy shorthand (|custom, |) while VDATE uses positional defaults (|). For consistency and extensibility, we could introduce key/value options across all format syntaxes (e.g., {{VDATE:var,format|default:today}}) and eventually deprecate shorthand forms. This issue is to track discussion and evaluate migration path.
