[Install issue]: Where is the documentation for full config options for chroma server? #4684

What happened?
Hi!
I am having a major upgrade on our chroma instance but I am struggling to find the documentation of environment variables that I can use to configure chroma server when running on Docker. Most options that I find on web look like they have become obsolete on newest version, and I could not easily find the full list of options. I do have a couple of guesses going through source code, this sample, and the migration guide but I am not sure if that's all that there is, and I am having troubles to ensure which envars are still relevant :(
e.g. I had these set but they are not mentioned in migration guide, nor in the sample:
CHROMA_PRODUCER_IMPL
CHROMA_CONSUMER_IMPL
