If you download the data via instructions provided in the github, the fruit database subfolders may have different names than what the codebase expects as of 3/14/2024.
Each fruit subfolder from the dataset has subfolder names which need to be changed because the codebase expects a different name. I believe that the following substitutions should be made to get the code to run:
VIS -> SPECIM_FX10
VIS-COR -> CORNING_HSI
NIR -> INNOSPEC_REDEYE
