[Docs] Provide info on how to set up and make use of it

I have an external kafka (and zookeeper).
I'd like to attach kafka-rest to it.
How to do that?
Any envs configured to handle that?
Or maybe exec args?
Or do I have to resort to mounting a config file (over built-in one)?
