chore: add releases and tags for the project

Background

When building on composable CoW, having a tagged latest version and/or GitHub release would be really useful as a starting point. AFAIU, there are contract dependencies with the infrastructure (for example, the watchtower), so knowing which contracts and contract versions to use would be great.

Details

Create a GitHub release and a Git tag for new officially supported versions.

Acceptance criteria

• A GitHub release and/or Git tag with the latest official version
• Process to add new GitHub releases and/or Git tags for future official versions
