Initial installation not working: config.ini.php not symlinked

Description

• /data is properly mounted
• First time starting the containers -> Setup screens of Matomo
• Restarting the containers -> config.ini.php changes were not persisted, the file is nearly empty -> Matomo shows setup screens again
• Probably Matomo destroyes the symlink and writes a new file upon setting it up / doing config changes

Fixed it my manually editing config.ini.php and adding [database] section:

host = "db"
username = "matomo"
password = "<password>"
dbname = "matomo"
tables_prefix = "matomo_"
type = "MariaDB"
