I have a similar issue. I think the issue is caused by increasing memory usage.

The userspace tunnel drops reported here predate #503, which fixed concurrency races in the userspace path (as stoktamisoglu suggested) and has long since shipped; PR #809 additionally gives the agent a liveness probe that recreates dead tunnels automatically. Please retest on the latest release (npm install -g go-ios@latest) — if the tunnel still dies after ~30 minutes with --userspace, reopen with ios version output and the agent logs from around the drop.
