Thank you @PietroMilillo . I think there is a step before EVI rasters where we pull the data from ESA/DEA and get a crop mask layer so we need to add that. Additionally, could you reflect a little on wether it is a better proxy for agricultural productivity or crop yield?

EVI is a proxy for both productivity and crop yield.
