docs: correct PACSeries Zenodo DOI to the paper-series concept
The series was tagged with 10.5281/zenodo.15783623, which is the repository software archive (concept 15595182), not the paper series. PACSeries is concept 10.5281/zenodo.17295102 (v0.1 17295103 -> v0.2 18743674 -> v0.3 21228036). Points these references at the concept DOI (always resolves to latest, now v0.3) and refreshes the stale v0.2 labels. Repository-citation references (README badge, CITATION, CONTRIBUTION bibtex, dawn-field-theory.md front-matter) are left untouched: they correctly cite the software archive DOI.
