[CT-2815] Deprecate version_to_bump_main in cut-release-branch.yml

Need to open PRs in adapters + core to remove version_to_bump_main input as it's no longer needed after merging: #114

The other defaulted inputs could probably be removed to to make the input lists for each repo shorter.
