Missing documentation on available values of `dbt_version`

The documentation of the optional field dbt_version is sparse, and doesn't list the available values which I only found in the dbt_version_validator.

Also the documentation doesn't list the default option/value.

This has not been completely resolved.

The https://github.com/dbt-labs/terraform-provider-dbtcloud/blob/main/pkg/helper/dbt_version_validator.go and documentation shoukld reflect the new various fusion versions.

eg. fusion-nightly, fusion-extended

Hi @VanTudor I also interpreted this issue in the way that @ronfru mentioned -- can you please add in the brand new Fusion release tracks as options in the Terraform provider?
