Integrate Prometheus & Grafana

Integrate existing [swagger-stats](https://swaggerstats.io/) with [Prometheus](https://prometheus.io/) and appropriate [Grafana](https://grafana.com/) dashboard.

Our expectations from the contributor is to update the existing docker-compose configurations to incorporate an instance of Prometheus and Grafana which can collect data from swagger-stats endpoint of the server.
