Reduce number of stories used in visual testing

We have a couple stories used for testing logic which can be disabled or opt-out for visual testing to reduce use of snapshots as we have a limited amount.

We reduce this for some components by introducing <component>.chromatic.tsx but this does not support component needing play for interactivity.
