Evaluate if Tanstack query is causing more harm than good; refactor if needed #460
Description
Tanstack gives us a lot for free but also does some harm. Especially:
- Refetch on browser focus
- Sometimes hard to configure not receiving stale data
- Unexpected subscription behavior
Most of these issues are configuration related, but I'm more convinced it is doing more harm than good. We should investigate these behaviors further, and scope out the work to replace it with basic vanilla queries and such.
