Apple Silicon -- SOS needs to be installed as a universal binary

When we use `dotnet-sos` to install `sos` into `lldb`, it causes issues because `llbd` is a universal binary.  Whichever arch of `sos` we install, lldb will complain when we try to load the sos plugin when lldb is run as the other arch.

I was able to workaround this by manually creating universal binaries for the sos plugin and sos.
