The issue has been verified in Visual Studio Code (version 1.98.2) and Visual Studio(version 17.14.0 Preview 2.0) and Maui (version 9.0.50). It can be reproduced on Android API 35 using the Pixel 8 emulator.

Almost all of the observed behavior is as expected:

• The repro shows version of a different assembly for console and for MAUI. For console it's the "entry point assembly" which is the VersionTest. For MAUI it's the calling assembly of the method GetApplicationProcessAssembly which for the "version" code path is the helper GetApplicationProcessVersion which comes from the Shared assembly. So MAUI shows the version of the Shared assembly in the repro.
• MAUI doesn't have a concept of an "entry point assembly" currently, but if you modify the code to get the right assembly VersionTestMaui it will work as expected.
• There's a second problem, that the VersionTestMaui assembly is produced with version 1.0.0.0. On the first glance, only the console app sets Version=1.0.1, but the MAUI project doesn't.
• Fixing this doesn't seem to work - I don't know why.
• But setting AssemblyVersion=1.0.1.0 in the MAUI project works, it makes the VersionTestMaui assembly to have version 1.0.1.0 and the modified code which uses the right assembly shows the correct version number.

So everything works as expected, with the exception of Version MSBuild property not having an effect in MAUI - I don't know if this is intentional or not. But using AssemblyVersion instead works just fine.

The behavior of Version seems to be affected by setting the ApplicationDisplayVersion. Basically the Version is overriden by the value of ApplicationDisplayVersion somewhere in the mobile SDKs (I was not able to find where it happens for Android - but the behavior is like that).
So the simpler (probably better) fix is to set ApplicationDisplayVersion=1.0.1 for the MAUI project - I verified that doing just that without setting either Version or AssemblyVersion also fixes the assembly version on disk.

I don't know the semantics of ApplicationDisplayVersion but this seems to make sense at least on the surface. Version doesn't do much in that case, while AssemblyVersion still works and if specified wins over everything else.
