Update the go version to 1.25

It's need to update go version to 1.25 in the CI and the packages (duckdb-go, arrowmapping, mapping) with relative dependencies

Hi @VGSML - why do we need the Go version update? Since it is fairly recent (August, 2025), maybe we could add it to our CI first for a while before bumping the go mod files?

Do we have any idea why the arrow C API tests are failing with Go 1.24?

Would like to know the reason as well.

The go directive in go.mod defines a minimum Go version, so with our current value of go 1.24.0, you can already use e.g. Go 1.25 right now.
