Upgrade `quick-xml` dependency to avoid security vulnerability

There are two security advisories for the quick-xml before v0.41.0

I fixed the compilation errors from upgrading to quick-xml v0.41.0.

Anyone else needing to resolve the security vulnerabilities can use my fork:
