Improve polychoric/tetrachoric/polyserial etc. (get rid of dependencies)

Would be nice to re-implement [these methods](https://github.com/easystats/correlation/blob/master/R/cor_test_polychoric.R#L4) to avoid depending on `psych` and `polycor` and also to have a more flexible implementation to someday try implementing a Bayesian version.
